Hackneyed Frittata: 

farriswheels:

  • 1 package of mushrooms that are barely on the good side before going bad.
  • Handful of fresh spinach that I need to use before they go bad/I go nuts from eating too much spinach.
  • Dried minced garlic because I can’t be arsed to get fresh stuff.
  • Dollop of pesto sauce because pesto sauce belongs in EVERYTHING, YES EVEN ICE CREAM.
  • 1 stick of string cheese because I don’t have any shredded.
  • 5 eggs because woops, this pan is huge and 3 is not going to cut it.
  • 1 old and abused Calphalon pan with a metal handle because you’re going to have to bake it later.

Sautee the mushrooms in a bit of hot olive oil with the garlic because mmmmm garlic. Garlic is fucking delicious and I am so glad I’m not allergic to it anymore.

Add the spinach and let it wilt and shit because it’ll look like a lot. I don’t like it getting to wilted, just enough to be pliable.

Add that dollop of pesto. I didn’t add nearly enough but it smells delicious.

In another bowl, break all the eggs and whip them together. Keep shells out! Shells are icky and you will ruin your frittata forever if you let shells get in.

Pour them over the spinach and mushrooms and junk, and let the eggs set a bit. Chop up the string cheese or use shredded cheese, watever. Put it on top.

Turn your oven on to broil! Pop the whole pan in the oven for a few minutes, keep an eye on it. When the egg on top is set and the cheese is melted and crap, it should be good. Just eyeball it, really.

Take out! Use a mit. Pan will be hot. 

Cut up and serve. Or just devour it whole. 

I would argue that this was one of my best posts.

Also I need to write more recipes like this.

And make a frittata.
